On this special episode recorded live in Door County, Wisconsin, co-host Tyler Buckingham and guest co-host Arica Sears (from ASPN's Big Tourism) speak with Dennis Hickey and Todd Stuth of the Baileys Harbor Fish Company. Early in the morning that this show was recorded, Tyler and Arica went fishing for Whitefish aboard the Lars, one of the fishing vessels that the Fish Company operates. Todd and his crew demonstrated how they sustainably harvest whitefish from the Green Bay and Lake Michigan, process the catch, and distribute it to over 20 restaurants on the peninsula where it is sold as a high value local delicacy. Dennis Hickey began commercial fishing based out of Door County in the 1960's and, in partnership with his brother, grew the business the business out of a garage and into a dedicated processing plant. Today, Todd runs the business with his wife (Dennis's daughter) and has expanded the business into the fisheries science and management space, working with several state resource management agencies and the National Parks Service.
